Ingredients:
200g Firm Tofu (recommended the one from Healthy Pulse), drain well and cubed (~1cm)
20g Olive Oil
20g Lemon Shio Koji (1.5 tablespoons)
1 teaspoon Thyme or other Italian Fresh Herbs (if you are using dried herbs, use 1/4 teaspoon instead)
Cracked Black Pepper (optional), to taste
1 little clove Garlic, grated or minced
Preparation:
Cut the firm tofu into cubes as instructed and place them in a medium-sized bowl.
In a separate bowl, prepare the marinade by combining the olive oil, Lemon Shio Koji, thyme or other herbs, black pepper, and grated garlic.
Pour the marinade over the cubed tofu, ensuring that all the tofu pieces are evenly coated with the marinade.
Transfer the tofu and marinade into a air-tight container (glass is recommended) or in a zip-bag.
Cooking:
Marinate the tofu in the refrigerator for 12 hours or at least over night to allow the flavors to infuse into the tofu.
Serving:
Once marinated, this vegan lemon feta can be enjoyed in various dishes. Use it crumbled over salads, sandwiches, or pasta dishes. You can add cubed avocado to add extra creamy texture. Experiment with different herbs and spices to customize the flavor to your liking.
