Recipe: Simple Ama-zake & Coconut Pancake (Gluten-free)
Overview: Indulge in these delectable gluten-free pancakes infused with the goodness of Amazake and coconut cream. Amazake, a Japanese sweet rice drink, brings enzymes, vitamins, amino acids, and fiber, making these pancakes not only delicious but also nutritious.
Ingredients:
Wet Ingredients:
1 egg
1 tbsp Coconut cream (butter or any other oil is also suitable)
1/2 tbsp Honey
50g Soymilk (normal milk is an alternative)
Dry Ingredients:
100g Brown rice flour (white rice flour is an acceptable substitute)
5g Baking powder
Topping:
1 tbsp Black Rick Amazake
1 tbsp Coconut Cream
Fresh Lime Juice
Preparation:
Combine all the wet ingredients in a bowl, warming them in a larger bowl with hot water to melt the ingredients. Whisk to combine.
Measure and sift together the dry ingredients.
Heat a heavy pan and brush it with oil (macadamia oil recommended).
Cooking:
Add the sifted dry ingredients to the bowl with wet ingredients, mixing well using a whisk.
Oil the heated pan and ladle one portion of batter onto it. Each batch yields about 10 pancakes.
Cook with medium heat and a lid on for about 3 minutes until the pancake achieves a caramelized dark brown color. Flip and cook for an additional 2-3 minutes.
Serving:
Serve the pancakes with a drizzle of Adzuke Amazake and a splash of lime juice.
